I’m Mara Ellison, a recipe developer and the cook behind Cast Iron Weeknight Kitchen. I created this site for people who want dinner to feel satisfying without turning a weeknight into a production. My favorite tool for that job is a cast iron skillet: it browns beautifully, moves from stovetop to oven, and helps simple ingredients taste like they were given real attention.

The recipes here focus on skillet dinners, lunches, quick pan sauces, sides, starters, and small-batch desserts. I write with the details I want in my own kitchen after a long day: how hot the pan should be, when to stop stirring, what temperature to look for, how long to rest meat, and whether leftovers are worth saving.
